    What's the diameter of Kenji's pan? I can find pans with 10 or 15 cm. What fits better?

    That burger dissolves at the bottom unless you eat it after 30 seconds. Bottom thing must be the burger. Burger master my arse

    The comedy of this guy, he seasons the burger then flips the seasoning onto the sheet pan where he loses 3/4 of the seasoning because it stuck to where the raw meat was pressed instead if into the hot pan where the seasonings would do their job, then season the other smart but NO COMMON SENSE😝

    Kenji, ive ran a succesful business in San Mateo, for 40 yrs, your tweet about Maga hats was a big mistake. This saddens me because I really wanted to frequent your spot. On the surface business in San Mateo seems like a mojposh of young mellenials, but the strengh of our economy. Here in SM is money spent by the older very conservative crowd. And their money is very loyal to local businesses. All which i have great relationships with. ( not that i agree with them on their political views, but this is business, and money and clientelle keep you in business during good and bad times. There is money trickling down from the likes of: Hearst, Bohannons, zucker,
    oracle, and much more big money
    players, who can keep you in business for generations. My advice to you is dont get political.

    Hmm... he says handle the burger as little as possible, and don't season before you cook.

    Gordon Ramsay says 'get your hands in there and mix it all together really well', and then season before cooking.

    I've been throwing my unsalted burgers for years and they always break. I now know the recipe for a more durable burger patty for tossing.
