    There does seem to be a temperature coefficient connected to your experiment. Once you reached the temperature that gave you the results you were looking for, you finally observed an explosion. Could the temperature be changing the molecular structure of the Sodium Chloride that causes the Sodium to finally react to oxygen in the water? In order for a solid to become a liquid, the molecular structure must undergo some kind of expansion to becoming liquid. Liquids become gases under the same conditions. Just like salt crystals, water crystallizes under temperature changes as well. If you use electricity, you can separate water into it's constituent gases. 2 parts Hydrogen, 1 part Oxygen. Mix the two together and you have HHO which by the way is very combustible.

    I still think it's chemical reaction.
    First it's do not looks like physical reaction, they usually don't have this repetitive pattern (i think) unless it's loosing contact
    Second not always chemicals reaction end up with different ph. This may lead to creation of another salt so basically no ph difference should occur.
    When heated enough salt and combine with water we provide energy to make chemical reaction.
    but it's just a wild thought of this in the middle of night :P

    Salt is sodium-chloride when put at high temperature the sodium separates from the chlorine and since the sodium has one valence electron it reacts very violently with water and even air
