    For me, it depends on WHO I am making burgers for.. when I go home, and see my sister and her kids, I will take 2 pounds of free range Prime Rib, and mix it with a 2 pounds of Short rib , and hand grind it to a medium coarse grind for my meat. Salt & Pepper just before cooking, NO EGGS or BREAD crumbs Bacon lard, Beef lard, or duck fat. Confit burger is OMG yummy.. I make my 8 oz burgers saucer shaped, add red onion slices to the top side, and a blue / gruyere cheese mix on a sour dough bread, with sauerkraut, mustard, I take mayo, ketchup, diced pickle, and pickled onion and mix it together, with a little red wine vinegar.
