    Instead of brown sugar I use Brer Rabbit ... I marinade steaks a few days in the fridge then for a week in the freezer ... Semper Fi ...

    I've made jerky a few times. It has always grown mold on the outside within a few weeks. Any thoughts on how to prevent this?

    I make my own BBQ sauce that is similar, however I love Cumin which is ground Coriander so I put lots in. One main difference is no sugar or molasses of any kind. Just me I guess.

    Thank you for this very informative video as I am a South African and has always wondered what the difference is between Jerky and my native Biltong... the difference is Jerky gets smoked but biltong gets hung up to dry in a dark ventilated room or in my case remember we even made biltong and hung them up under the bed to dry(the traditional voortrekker way) so you let the meat dry as to your taste some people like biltong with a little red meat still and others like it Dry as a dessert so depending on taste it hangs for up to 2 or 3 weeks.
